Slim Jim Baked Chicken

Ingredients:
8 Chicken legs (thighs are best)
1 tsp garlic salt
2 tsp paprika
½ tsp ground oregano
½ teaspoon grated lemon peel (important)
⅓ cup lemon juice
½ cup water

Directions:
Season chicken pieces with garlic salt, rubbing well into flesh. Sprinkle with paprika.
Place chicken skin side down in shallow baking pan, placing larger chicken pieces in the corners and smaller pieces in the center.
Combine oregano, lemon peel, lemon juice and water, then pour over chicken.
Bake uncovered at 400° for 30 minutes.
Turn chicken over and bake 30 minutes longer or until tender.
Baste with pan drippings once or twice.

Serves 8

Fiesta Chicken Kiev

Fiesta Kiev all ready to go!

Ingredients:
4 Boneless Chicken Breast
1 Can diced green chilies
8 Oz. Jack Cheese (grated)
½ Onion finely minced
1 Package Cheddar Cheese Goldfish
I package Taco Seasoning
1 Cube Butter

Directions:
1.     Place the chicken on a cutting board and pound out until thin.
2.     Mix Cheddar Cheese, Green Chilies and Minced Onion in a small bowl and set aside.
3.     Pour contents of Taco seasoning and Cheddar Cheese Goldfish in a large Ziploc bag.
4.     Use a rolling pin or a glass to crush the mixture until most chunks are gone.
5.     Melt butter in separate small bowl.
6.     Place ¼ of the cheese, chili and onion mixture in center of chicken breast.
7.     Roll the chicken around the mixture.
8.     Dip in melted butter and then in dry ingredients.
9.     Place on a baking sheet with the opening place down to keep ingredients inside.
10. Bake in 350 oven for 45 minutes or until bubbly.

Kiev all bubbly!

KFC Clone Recipe

Ingredients:
2 cups all purpose flour
½ teaspoon thyme
½ teaspoon salt
½ teaspoon oregano
½ teaspoon basil
4 tablespoons paprika
1/2 teaspoon sage
1 teaspoon ground ginger
1 tablespoon dry mustard
1 tablespoon black pepper
2 teaspoons garlic powder
1 tablespoon celery seed
8 chicken pieces

Directions:
Soak Chicken pieces in buttermilk overnight.

Mix all dry ingredients in a large bowl.
Coat chicken pieces with dry mixture until well covered
Fry at 325-350F in Canola oil for 15 – 20 minutes or until golden brown
Use a spider or strainer to remove fried chicken from hot oil
Drain on paper-towels to absorb as much excess oil as possible
Serve with mash potatoes and gravy, corn and dinner rolls.
