Parsley, Garlic, Cheese Sauce

Ingredients:
1 pound of pasta – any type
6 tbsp extra virgin olive oil
2 garlic cloves, minced
1 cup chopped fresh Italian (flat leaf) parsley
Salt and pepper to taste
1/3 cup freshly grated romano cheese
Makes 4 servings

Directions:
While the pasta cooks, combine the oil, garlic, parsley, salt, pepper and cheese in a serving bowl.
Toss into drainded pasta

Fennel, Shrimp and Saffron Sauce

Ingredients:
1 pound of pasta – any type
1/2 tsp saffron threads
1 cup dry white wine
1 tbsp olive oil
1 medium onion, chopped
1 rib of fennel, peeled and cut in a medium sized dice.
1 garlic clove, minced
1 tsp fennel seed, ground
1/2 pound (26-30) shrimp, peeled, deveined and halved lengthwise
4 tbsp (1/2 stick) unsalted butter
Salt and pepper to taste
Makes 4 servings

Directions:
While the pasta cooks, mix the saffron thread and wine together and set aside.
Heat the oil in a nonstick pan over medium high heat.
Add the onion and fennel and cook until onion is softened, stirring often.
Add the garlic and fennel seed and cook another 30 seconds.
Add the saffron-wine mixture and bring to a hard boil and liquids reduces to 1/4 cup.
Add the shrimp and simmer for 30 seconds.
Remove from heat and mix in the butter.
Season with salt and pepper to taste.
Serve over pasta

Ginger Tomato Sauce

Ingredients:
1 pound of any type of pasta
2 tbsp olive oil
1 large onion, chopped
2 tbsp finely chopped fresh ginger
2 clove of garlic, minced
12 plum tomatoes, stemmed and chopped
OR 1 28oz can of whole tomatoes, drained and coarsely chopped
1 tbsp tomato paste
4 whole scallions, thinly sliced
Salt and Pepper to taste
Makes 4 servings

Directions:
While the past cooks, heat the oil over medium high heat in a medium skillet.
Add the onion and ginger and cook until onions soften.
Add the garlic and tomatoes and cook until bubbling.
Stir in the tomato paste, scallions.
Salt and pepper to taste. Cook one more minute and serve over pasta.

Quick Fresh Tomato Sauce

Ingredients:
1 pound of any type of pasta
2 tbsp olive oil
1 large onion, chopped
2 garlic cloves, minced
1 small dried chili pepper
12 fresh plum tomatoes, stemmed and chopped
OR 1 can whole tomatoes, drained and coarsely chopped
1 tbsp tomato paste
Salt and pepper to taste
8 fresh basil leaves, chopped
Freshly grated Parmesan or Ronano cheeese (optional)
Makes 4 servings

Directions:
While the pasta cooks, heat the oil in a medium skillet over medium-high heat.
Add onion and cook until softened.
Add garlic, chili pepper and tomatoes and cook until the tomatoes bubble vigorously.
Stir in tomato paste and season with salt and pepper.
Stir in the basil and heat for another minute. Remove the chili pepper.
Serve over pasta.
