Tzatziki Sauce (Cucumber Dressing)

Ingredients:
2 Cups (16Oz.) Greek Yogurt (Greek Yogurt is much thicker)
2 Cucumbers (peeled and seeded)
1 Tbsp. Dill
Juice of 1 Lemon
2 or 3 cloves of fresh garlic finely minced

Directions:
Slice the Cucmber in half and use a spoon to scrape out all the seeds.
Slice the cucmber in strips and then crossways to make small relish like pieces.
Squeeze the juice of 1 whole lemon and remove any seeds.
In a mixing bowl combine the Greek Yogurt, Cucmber pieces, Dill, garlic and lemon juice.
Whisk and check the flavor. If it is too sour you can add a very small squeeze of honey or Agave sweetener. Sugar would also work.

Use this delicious sauce with Gyro Sandwiches or anything else you desire.

Orange Vinaigrette

Ingredients:
1/2 cup French olive oil
1/4 cup chamgagne vinegar
3 tbsp grated orange rind

Directions:
Whisk together and serve

Sunomono Dressing

Ingredients:
1 tbsp sesame seeds – toasted and crushed in a mortar while still warm
1/4 cup rice vinegar
2 tbsps mirin (Japanese cooking sherry)
2 tbsp tamari (wheatfree soy sauce)
*Optional: add a few drops of sesame oil
Makes enough for 4 salads

Directions:
Combine all ingredients in a blender or food processor.

Enjoy!

Apricot Riesling Dressing

Ingredients:
2 cups apricot nectar
1/4 cup grey riesling wine
Squeeze juice from a lime

Directions:
In a large heavy skillet on high heat, reduce the apricot nectar to 3/4 cup whisking frequently to keep from burning.
Chill before serving.

Aioli

Ingredients:
4-6 cloves of garlic
1 egg
1 tsp fresh lemon juice
1 tsp Dijon mustard
1/2 tsp salt
1/4 tsp ground white pepper
3/4 cup of oil – half peanut oil and half olive oil

Directions:
Chop the garlic in a food processer.
Add the egg, lemon juice, mustard, salt, pepper and blend well.
Keep machine going and slowly add the oils into the mixture.
It will have the consistency of mayonnaise

Banana Poppy Seed Dressing

1 cup plain yogurt
2 ripe banans
1 tsp fresh lemon juice
3 tbsp honey
2 tbsp poppy seeds
Makes enough for 4 salads

Directions:
Mix all ingredients in a blender or food processer

Green Peppercorn Mustard Vinaigrette

4 tbsp green peppercorn mustard
2 tbsp hazelnut oil
4-5 tbsp olive oil
1 tbsp chamgagne vinegar
Juice of 1 lemon
Dash of nutmeg
Makes enough for 4 salads

Mango Vinaigrette

1 ripe mango – peeled, seeded and cut into large pieces
2 tbsp sesame oil
2 tbsp rice vinegar
1/2 tsp curry powder
Makes enough for 4 salads

Directions:
Combine all ingredients in a blender or food processor and puree until smooth.

Enjoy!

Raspberry Vinaigrette
