Eel Sauce

1 cup Aji Mirin
1 Cup Soy Sauce
1 Cup Granulated Sugar

Mix all ingredients in a sauce pan
Slowly heat until sauce comes to a boil.
Reduce heat to a simmer
Simmer for 30 to 45 minutes or until sauce is reduced by half.
Cool and pour in to a squirt bottle.
Will keep in fridge for a month or more.

Use on sushi, won tons, egg rolls or whatever you like.
