Memphis-Style Rub

4 tbsp dark brown sugar
2 tbsp garlic powder
2 tbsp onion powder
2 tbsp celery salt
2 tbsp paprika
1 tbsp ground cumin
1 tbsp salt
2 tsp mustard powder
2 tsp dried sage
2 tsp pepper
1 tsp ground bay leaves
1 tsp cayenne pepper
*Makes about 17 tbsp

Mix all ingredients thoroughly
Rub the mixture into meat, poultry or fish.
Coverly tightly and refrigerate for several hours or up to 24 hrs.
Leave out salt if using max time and sprinkle salt just before cooking.
