Mushroom, Sweet Vinegar and Garlic Sauce

1 pound shaped pasta – shells or ziti
1 small onion, chopped
1/4 cup olive oil
2 cloves of garlic, minced
1 pound mushrooms, cleaned, stemmed and chopped
1 tbsp tomato paste
Pinch of rubbed sage
Salt and freshly ground black pepper to taste
1 tbsp balsamic or sherry wine vinegar
3 tbsp chopped fresh Italian (flat leaf) parsley
Makes 4 servings

While the pasta is cooking, cook the onion in the olive oil in a large skillet over medium heat until softened.
Add the garlic and mushrooms and cook until they become soft.
Add the wine, thyme, tomato paste, sage, salt & pepper and cook 2 more minutes.
Add the vinegar and cook until slightly thickened.
Stir in parsley.
Serve over your pasta
